Fleur de Sel Caramels

I adore caramel! I'm sure any day you open my fridge there will be a jar of homemade caramel sauce. It goes with toast, fresh fruit , popcorn and even with certain meats! and whenever i cook the caramel a bit longer i have these delicious chewy candy! And nothing is better than homemade caramels!

Here is what you need:
1/2 cup of granulated sugar
1/4 cup of light corn syrup
1/2 cup water
1 1/2 cups of heavy cream
5 Tbsp of unsalted butter
1/2 Tsp pure vanilla extract
1 Tsp fleur de sel plus extra for sprinkling

Line the bottom of a loaf pan with parchment paper, then spray paper with cooking spray.
Over medium heat, in a heavy bottom deep saucepan mix the sugar , corn syrup and water and bring to a boil . Without swirling keep boiling until the sugar is a golden color.
In a separate pan bring the cream, butter, and fleur de sel to a simmer. Remove from heat.



When the sugar is the right color add the cream mixture slowly as it will bubble up violently, stir in the vanilla and let it cook with a candy thermometer until it reaches 248F. being very careful since it's very hot, pour mixture into the prepared pan. Refrigerate untill firm.
When the caramels are cool, use the parchment paper to pry the sheet from the pan onto a cutting board.
Sprinkle with fleur de sel and cut into small squares . Roll each caramel in a square piece of parchment paper.
