You need good quality italian tomatoes, herbs,wine,...all sounds so perfect together!!!
Ingredients:
I make a large pot at once and either can it or freeze it!
106 oz of good quality italian san marzano whole peeled tomatoes
2 Tbsp of tomato paste
2/3 cup of dry red wine
1 Tbsp of sugar( to cut the acidity)
1 large yellow onion chopped
6 cloves of garlic chopped
2 large carrots chopped
2 ribs of celery chopped
1/4 cup of olive oil
Fresh parsley chopped
Fresh basil chopped
Fresh oregano chopped
Salt and Pepper
In a large heavy bottom pan saute onions and olive oil until translucent. Add garlic , carrots and celery and saute all vegetables together until completely coated with the oil, about 5 minutes. Meanwhile pour tomatoes in a large bowl and break them into pieces with your hands.
When vegetables are done, add the wine to them and let it cook on high for 2-3 minutes . Add the tomatoes, tomato paste and sugar and bring to a simmer . Cook it on low for 1 hour . Add salt and pepper to taste and the fresh herbs(as much as you like, i tend to use a whole lot) and cook for another 15-20 minutes. Let it cool down and them blend about 2/3 of the sauce and pour it back into pan with the unblended part .
This sauce will freeze in ziplock bags or mason jars for 6 months.
