Pork Tacos

I am a huge fan of tacos, they are easy to make, and extremely tasty!
Remember the pork roast? This is the day after the pork roast... chopped and sauteed with onion, tomato and corn, topped with fresh salsa verde ...

Ingredients:
3 cups chopped cooked pork
2 large tomatoes diced
1 large onion chopped + 1/2 chopped onion to top it
2 tablespoon olive oil
1 jalapeno chopped
2 ears of corn off the cob
1/4 cup chopped cilantro
20 corn tortillas( i like double tortillas per taco, this way they won't break into pieces before you can get a bite)
lime wedges
salt and pepper to taste




Heat olive oil in a large frying pan. Add onions and cook for 3-5 minutes. Add pork, tomatoes, corn and jalapeno. Cook on low for 15 minutes. Season to taste.

Heat the tortillas in microwave wrapped in wet paper towels (this way they won't dry).
Lay 10 sets of 2 tortillas each. Scoop pork mixture on top. Sprinkle raw onion and cilantro and top it with salsa verde. Serve with fresh squeezed lime and a cold mexican beer.




Cucumber Salad

I planted 3 cucumber plants this spring and from them i have picked over 3 dozen cucumbers... I walk over to the garden every morning to find a full size cucumber... They grow so fast! Good thing i love them with just about anything! This morning i picked a jalapeno and some basil and decided to make a salad out of it! So refreshing on a hot summer day!


Ingredients:
1 large cucumber peeled and thinly sliced
1 jalapeno diced
1/3 cup of rice vinegar
1/2 cup ice cold water
handful of chopped basil
2 tablespoons of sugar
salt and pepper to taste

Mix vinegar, water and sugar until dissolved. Add the other ingredients and let it sit in the refrigerator for 1 hour before serving.
