My name is Bia Rich and i absolutely love to cook and experiment with new flavors. I lived and worked in the restaurant business in NYC for 20 years and now moved to the country in North Carolina. All i do now is cook, garden and take care of my boys, and I'm loving it!!!

Potato Wedges

Craving french fries, but don't want to feel extremely unhealthy? Try baking these delicious potato wedges, and you won't regret it!

Ingredients:
3-4 large red potatoes
olive oil to coat potatoes
kosher salt
fresh pepper
smoked paprika


Preheat oven to 425F.
Cut potatoes into 12-14 wedges, or as thick as you like.
Spray a cookie sheet with cooking spray.
In a large bowl , toss together potatoes, enough olive oil to coat, salt, pepper and smoked paprika. Pour into cookie sheet and bake in preheated oven for 15 minutes. Remove from oven and with a metal spatula turn the potatoes. Bake for another 10 minutes or longer to desired doneness.

  3. I'm hopping from Basilmomma's too. These potatoes look so good. I love that you put paprika on them. I do too but I must admit that I do it because my mother always did it. The apple doesn't fall far from the tree, does it? LOL

    Now I'm hungry :)
