Rice with Chicken... The Brasilian way

Growing up in Brasil, about once a week we would have this dish, and we called it risotto. Very different than a italian risotto but still the same idea...
This is a great recipe for leftover chicken, either if you have rice cooked or not... and if you don't have leftover chicken, just quickly pan fry a couple thin pieces of breast in a little olive oil and shred it.
This is enough for 2 rectangle ramekins for individual servings.

Ingredients:
1 1/2 cup of cooked white rice
1 cup of shredded cooked chicken
2 tablespoons of tomato paste
1/2 cup of fresh or frozen peas
1-2 tablespoons of chicken stock or water
salt and pepper to taste
1 cup of shredded mozzarella cheese

In a medium saucepan over medium heat, mix tomato paste and chicken stock. Add rice, chicken and peas. Season to taste and cook for about 5 minutes.

Transfer rice mixture to 2 rectangle single serving ramekins and top them with mozzarella cheese. Set them under a hot broiler for about 1 minute to melt the cheese. Serve it hot.
