I ate it plain, and then on tacos, and then plain, and then on tacos, and when my belly was really full, i froze in 4 separate bags with a little of the cooking liquid in each bag for later use and to keep the moisture of the pork! I can see quesadillas, salads, and nachos in my near future!
Ingredients:
4-6 pound Bone-in Pork Boston Butt
2 tablespoons salt
1 tablespoon fresh pepper
1 tablespoon smoked paprika
1 teaspoon dry thyme
1 large onion, chopped
6 cloves garlic, sliced
2 bay leaves
1 cup white wine
2 tablespoons soy sauce
4 cups beef or chicken stock
A CROCKPOT!
Rub pork with salt, pepper, paprika and thyme.
Place onions and garlic on bottom of crockpot. Add pork, bay leaves, wine, soy sauce and stock.
Cover and set it on low for 9 hours. If you cook longer it will be just as good.
For tacos, just pull some of the meat apart and place in a tortilla with chopped onion, jalapeno and cilantro.
