Udon with Bean Sprouts, Portobellos and Corn

If you are looking for a quick asian inspired dish, this is the perfect one! You can put it together in 15 minutes for a great meal.

I use the udon found at asian stores that look like a pack of ramen noodles and discard the flavoring package, or you can use the dry Udon.
So quick and so tasty, that i forgot to get a nice picture!
A great side to a grilled marinated flank steak. Place thin slices of steak on top of noodles.

Ingredients:
4 servings

1/2 onion chopped
1 tablespoon olive oil
1 cup fresh bean sprouts, or if not available look for the canned bean sprouts found in asian section of grocery stores
1 can corn or 1 cup frozen corn
2 portobellos, some sliced, some chopped
4-6 tablespoons low sodium soy sauce
2 tablespoons chopped green onion for garnish
2 10oz packages udon, cooked according to package directions

In a large frying pan, heat onion and oil. Cook for 5 minutes. Add portobellos and 2 tablespoons of soy sauce. Cook for 3-5 minutes. Add bean sprouts, corn and 2 tablespoons of soy sauce. Stir it well. Add noodles and if needed, add more soy sauce. Sprinkle green onions on top and serve hot.
