Was on my way to my girlfriend's last night for soup supper and just couldn't think of a dessert to bring. The crave was so strong all i wanted was chocolate.... found some leftover bread in the fridge, mixed some eggs, butter and milk and VOILĂ€... chocolate bread pudding, easy and quick...with a little fresh wipped cream on top and my crave was gone, it was the perfect dessert after soup and everyone loved it!
Will make it again soon and take better pictures, it was late at night with bad lighting...:-(
Ingredients:
12 slightly stale rolls or thick slices of crusty bread, cut into cubes
1 stick unsalted butter, melted
1 cup sugar
5 eggs
1 teaspoon cinnamon
1 teaspoon vanilla extract
2 cups milk
2 cups dark chocolate chips or chucks
2 cups heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Preheat oven to 350F.
Place bread cubes and chocolate chips in a 9 x 13 baking dish.
Whisk butter and sugar together. Add eggs, cinnamon and vanilla and whisk it well. Add milk and whisk it in. Pour mixture over bread cubes and with a spoon squeeze bread in to the milk mixture so every piece is soaking in milk mixture. Let it soak about 10 minutes.
Cover with foil and bake 35 minutes. remove foil and bake for another 10-12 minutes. It should be very soft inside. Serve warm.
With a electric mixer, with the whisk attachment, beat heavy cream until thickened. Add vanilla and sugar and beat for 1 minute. Serve on top of warm pudding.
